I have to apply to Clark University and it give a slot to write your gender in if it's not binary, will it address me as my gender in my acceptance?! I'm not out so I really don't want it to out me. Thanks!

Quite possibly but there is always the possibility they will use your preferred pronouns on your student ID along with some other perks. And while this may sound terrible some schools have a quota of minorities they have to accept (like a certain percentage of non white cis straight people) so there is a possibility you could get in easier.
