In regards to having to disclose your gender when you sign up, I'm sorry about that. It's a Proboards thing (our host) and if I can find a way to change that I will.
Fortunately, you can hide your gender marker if you want to! Or change it!
Go to Profile > Edit Profile > Personal to change your gender (unfortunately, it only has male and female. Which sucks. I want to change that.)
Go to Profile > Edit Profile > Privacy to change your gender visibility.

This is actually up to each member. To change the view settings of your gender, you need to go to your proboards account settings here.  |

You can also do it through the settings I did above, but I guess that's a universal setting for all Proboards?

It actually works both ways! The ways are slightly different, though, and you provided a link, which was better!

I *think* there's a way to add extra text fields to profiles, though, so it might be an option to have one that just says "gender" with a text field behind it. So people can fill it in (or leave it blank!) as they choose.
